The White Linen is a unique, fine-dining restaurant based on contemporary French and American cuisine. Chef Adam VanDonge and his wife, Kasie, have opened this restaurant to give Topekans a taste of truly unique dining in a small town environment. Chef Adam takes locally grown, bred, and produced products and re-imagines them into a modern, unique treat with the familiar structures and textures known to be a staple of the Kansas plains, America's homeland. Chef Adam takes pride in the art of cuisine and will aim to continue to "wow" his clients and customers in his newest of adventures, The White Linen.
Our tapas menu is served on Tuesdays from 5:00 p.m. to 9:00 p.m. Our regular dinner hours are Wednesday - Saturday 5:00 p.m. to 9:00 p.m. We also host private dinners upon request on Mondays.

Adam and Kasie VanDonge

Adam VanDonge is a small town boy turned Gourmet Chef. He grew up on a farm near Soldier, Kansas and graduated from Onaga High School. He graduated with an Associates from the Culinary Arts School of the Arts Institute International in December of 2010. He worked at numerous upscale country clubs and gourmet restaurants before pursuing his dream of being a business owner in the food industry. He opened the 5th Street Sandwich Shoppe in June of 2013. He remodeled and designed a gourmet dinner spot in the back of the shoppe less than a year later and began serving Drum Room dinners shortly thereafter. Adam then pursued his lifetime goal of opening a high-end, gourmet restaurant in Topeka in the famous Columbian Building.
Adam is a food fanatic and spends his long days prepping for the day's business while listening to the remarkable and charming music of Mr. Frank Sinatra and the classic compositions of Mozart and Beethoven. His favorite chef is Thomas Keller. Adam admires Keller's innovation and hard work and his inability to see a limit to his creative work with food.
Adam is married to his best friend and business partner Kasie. They have two beautiful children.
Adam's top places to eat would be the Vineyard in Weston, Missouri, Le Stick Noveau in Eureka Springs, Arkansas and The Grey Plume in Omaha, Nebraska.
Kasie was raised in a small town and later a farm in northeastern Kansas. She has an Associate's degree in Arts from Highland Community College and is a 2017 Fort Hays State University Magna Cum Laude graduate with a Bachelor's degree in Political Science with an emphasis in Law. She is furthering her education at Washburn Law. You will find her studying in the library or perusing The White Linen to make sure her customers are comfortable, happy, and ready for yet another unique dining experience on behalf of Chef Adam. She is currently working as a prosecuting intern at the Shawnee County District Attorney's Office. Kasie is part owner and creative advocate for the restaurant, the website, and the customer's experience at The White Linen.
